Dracula is said to be having intercourse with her that contaminating her blood with that of his culture, against the Victorian belief. In the end, Lucy is killed in a weird, sexually committed violence as a way of eliminating Dracula's blood from the Victorian generation.
Lucy was losing blood, first because of Dracula as the vampire was sucking her blood when she was asleep, and therefore needed a transfusion which three men offer to help. Thus, the surface meaning of blood is the normal fluid in the human body. However, literary, the extract brings out blood as a powerful tool that men use to control women, as seen with the transfusion of blood between Dracula and Lucy, which makes her unable to control her sexual desires.
